Peach Cobbler Cheesecake Egg Rolls Recipe


Ingredients:
For the Peach Filling:

2 cups fresh peaches, peeled and diced (or use canned peaches, drained)
¼ cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 tablespoon lemon juice
For the Cheesecake Filling:

8 oz cream cheese, softened
¼ cup granulated sugar
1 teaspoon vanilla extract
For the Egg Rolls:

12 egg roll wrappers
1 egg, beaten (for sealing)
Oil for frying (vegetable or canola)
For the Cinnamon Sugar (optional):

½ cup granulated sugar
1 teaspoon ground cinnamon
For the Optional Glaze (if desired):

½ cup powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla extract
Directions:
Prepare the Peach Filling:

In a medium saucepan, combine the diced peaches, granulated sugar, cornstarch, ground cinnamon, and lemon juice.
Cook over medium heat, stirring occasionally, until the mixture thickens and the peaches are tender, about 5-7 minutes.
Remove from heat and let cool.
Prepare the Cheesecake Filling:

In a medium bowl, beat together the softened cream cheese and granulated sugar until smooth.
Add the vanilla extract and mix until well combined.
Assemble the Egg Rolls:

Place an egg roll wrapper on a clean surface with one corner pointing towards you.
Spoon about 1 tablespoon of cheesecake filling and 1 tablespoon of peach filling onto the center of the wrapper.
Fold the bottom corner over the filling, then fold in the sides, and roll up tightly to seal. Brush the top corner with the beaten egg to help seal the edge. Repeat with remaining wrappers and filling.

Heat oil in a large skillet or deep fryer to 350°F (175°C).
Fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Prepare the Cinnamon Sugar (optional):

In a small bowl, mix together the granulated sugar and ground cinnamon.
While the egg rolls are still warm, roll them in the cinnamon sugar mixture.
Prepare the Glaze (optional):

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the warm egg rolls or serve on the side for dipping.
