Pan-Seared Salmon with Plantains

Ingredients

Salmon Fillet – 1 fillet

Plantains – 1 ripe, sliced

Spinach – 1 cup, fresh

Avocado – 1/2, sliced

Salt & Pepper – to taste

Chili Flakes – optional, for garnish

Olive Oil – 2 tbsp

Lemon Juice – a squeeze

Instructions

1. Prepare the Salmon

Season the salmon with salt and pepper.

Heat a pan over medium-high heat, add 1 tbsp olive oil, and place the salmon skin-side down.

Cook for about 4-5 minutes on each side until golden and crispy.

2. Fry the Plantains

In another pan, add a little oil and fry the plantain slices until golden brown on both sides.

Set aside on a paper towel to absorb excess oil.

3. Sauté the Spinach

In the same pan as the salmon, add a handful of spinach.

Cook until wilted, about 2 minutes, then season with a pinch of salt and a squeeze of lemon.

4. Plate and Garnish 🍽️

Arrange the salmon, fried plantains, and spinach on a plate.

Add avocado slices on the side, sprinkle with a pinch of chili flakes for a hint of spice.
